- Heat oven to 450
- Remove giblets and rinse chicken in cold water inside and out. Dry inside and out well with paper towels.
- Rub generous amount of kosher salt inside and out.
- Rinse orange and cut in half.
- Peel onion and cut in half.
- stick half the orange, the two halves of onion and then the last orange into the cavity.
- Put in pan and roast for 45-50 min on one side and flip; roast for another 45-50 min.
