Lentil Soup
  • yellow onions, chopped 2 large
  • garlic, chopped 3 cloves
  • carrots, roughly chopped 3
  • celery, roughly chopped 4 stalks
  • potatoes, diced 3
  • dried lentils 1 bag
  • bay leaves 3
  • salt 2 Tbsp
  • thyme 1/2 tsp
  • cumin 1 tsp
  • water 10 cups
  • Better Than Bullion 2 tbsp
  • Bacon, diced 4 strips
  1. caramelize onions
  2. add garlic, cook until fragrant
  3. add bacon, cook until browned
  4. add carrots, celery, water, BTB
  5. bring to simmer
  6. add dried lentils
  7. season with bay leaves, thyme, and cumin
  8. add kielbasa and diced potatoes
  9. simmer until desired consistency is reached
