Mashed Potatoes
  • Red potatoes, cut into 2 inch cubes 3 lbs
  • Water 1 Cup
  • Unsalted butter 1 Stick
  • Garlic, roasted 1 Head
  • Cream cheese, softened 8 oz
  • Milk 1/2 - 3/4 Cup
  • Kosher salt 2 tsp
  • Black pepper 1 tsp
  1. Add the potatoes, salt and water to the instant pot, cook on high pressure for 8 minutes.
  2. Rinse the potatoes, add the roasted garlic, butter, cream cheese, and pepper, and mash.
  3. Add milk until you reach the desired consistency.
  4. Salt and pepper to taste.
