Dressing
  • nonfat greek yoghurt 6 oz
  • garlic minced 2 cloves
  • jalapeno minced 1 tsp
  • cilantro chopped 2 tbsp
  • scallions chopped 2 tbsp
  • ground coriander 1/2 tsp
  • cumin 1/2 tsp
  • sugar/splenda mix 1/8 tsp
  • salt and pepper to taste
  • water
  1. Combine all ingredients but water and mix thoroughly
  2. Add 1 tbsp of water at a time until desired consistency is reached
  3. chill for 20-30 minutes to allow flavors to meld

  • cucumber, seeded and diced 1/2
  • cherry tomatoes, halved
  • red bell pepper, strips 1/2
  • radishes, sliced 6
  • salad greens
